Note: Various aspects of the NY Sanitary Code were discussed with new/temporary onsite staff, focusing on the elimination/prevention of public health hazards.

Comments: A box and a half of unlabeled reduced oxygen packaged broccoli (approximately 12 packages) were present in the large walk-in freezer. As per discussion with the operator, the broccoli was purchased, as is, from Hub on the Hill. Until our office can confirm and refute that the Hub on the Hill has the proper license/waiver to package items in reduced oxygen packing these packages of broccoli cannot be used. Our office will contact you once this information is clarified.

Comments: On the serving line, temperatures were recorded using a Department of Health thermocouple thermometer- (Hot held items) cooked pees: 140 degrees F, quinoa: 159 degrees F, chicken tenders: 165 degrees F/ (cold held items) sliced turkey: 42 degrees F, sliced ham 44 degrees F. The hot water dishwasher was observed as operating correctly, reaching temperatures in excess of 180 degrees F in the rinse cycle.
