Comments: All food temperatures measured during the inspection are within the acceptable ranges. A new food service manager is in place at this facility, so the inspector and the new manager discussed various aspect of the sanitary code that are directly applicable to this establishment. Note: Various portions of the school building are under construction. As part of the construction a large metal panel above the walk-in cooler is not in place and a few new holes are present in the ceiling above the space in front of the walk-in cooler. When the construction is complete these holes need to be repaired leaving the surfaces smooth and easily cleanable, and the metal panel needs to be securely re-installed.

Cooling log examples were provided to the operator to aid in monitoring this cooling process.

Comments: All violations from the previous inspection have been corrected. All temperatures measured during the inspection were within acceptable ranges. The high-temperature sanitizing dishwasher was observed working in accordance with the manufactures specifications. Lead in drinking water sampling results, faucet replacement and re-sampling was discussed for Petrova and the High School with onsite maintenances staff. The school district is in the process of replacing multiple faucets/fixtures that previously had elevated "first draw" lead levels. Once these faucets/fixtures have been replaced resampling will occur.

The hot water dishwasher was observed as operating correctly, reaching temperatures in excess of 180 degrees F during the rinse cycle.
