Item 15B: Lighting and ventilation inadequate, fixtures not shielded, dirty ventilation hoods, ductwork, filters, exhaust fans Comments: Food temperatures measured were acceptable: hardboiled egg = 43° F, sliced tomato = 41° F, deli ham = 43° F, Swiss cheese = 46° F. Discussed keeping smaller amounts of cheese in the containers in the top section of the sandwich top refrigerator because cheese is a dense food and more difficult to keep cold. Also discussed using metal pans instead of plastic. Discussed cooling of leftover soups and cooked chicken. If cooling is done, a cooling log must be maintained to verify that foods are cooling from 120° F to 70° F in 2 hours or less and from 70° F to 45° F in an additional 4hours or less. A cooling log was provided. Recommend cold holding all potentially hazardous foods at or below 41° F. |
