Menu is limited to prepackaged baked goods (purchased from the Hub on the Hill) and coffee. There is no oven at the facility and no food prep sink. Once the ansul hood is inspected and additional refrigeration is purchased to accommodate cooling and cold holding you must contact our office if you intend on establishing a more high risk operation with cooking, cooling and reheating. Cleaning procedures for various supplies and equipment in the facility was reviewed. The basement storage room is being used to store dry goods. The operator indicated he was interested in installing commercial refrigeration, commercial dishwasher, soft serve ice cream machine and hard ice cream in display case, dip well (on municipal water and sewer) with an air gap, using the ice machine, removing the bar style 3 bay in the front and putting the larger 3 bay into service in the main kitchen (drainboards or similar as required by 14-1 for storage of dirty and clean dishes), installing coffee roasting unit, It was recommend that you relocate the mop sink upstairs while construction is ongoing. Catered pancake breakfasts by a licensed caterer was discussed. You must complete the notice of intent form, supplied at the time of inspection via email, along with a layout sketch of the facility and submit specification sheets for all new equipment for approval prior to making an purchases or installations. |
