Comments: Recommend purchasing additional thermometers, shallow stainless pans for cooling, chill wands, sanitizing buckets, deep metal containers for the top of the deli cooler (with lids). Thermometers were on site and accurate. Three bay dishwashing was discussed. An employee sick foodworker policy was discussed. All cold and hot holding temperatures were found to be acceptable. The menu was reviewed at the time of inspection. A food safety packet was provided at the time of inspection.

Comments: A field visit was performed to evaluate current construction in the bar prep room, employee/customer restrooms, bar area, and future plans for the kitchen areas. A permit application for the food service including all areas reviewed today must be submitted as early as possible to help expedite permitting for the start of the 2018 golf year. Per interview, kitchen renovations are expected to start in april 2018. You must submit a completed application and notice of intent form for approval prior to purchasing or starting construction. Refer to email dated 6/22/17 for requirements and application materials. refer to inspections dated 4/21/16 and 5/17/17 for operational inspection violations. Per interview all new flooring, wall and ceiling materials will be installed in the kitchen along with all new commercial equipment. The operator wishes to open in 2018 serving hot dogs and hamburgers to start the season from the bar area. Pending review of the permit application, the kitchen dishwashing/prep/refrigeration room off the cooking kitchen will be finished to meet requirements set forth in the 6/22/17 email for service of prepackaged chips, hot dogs and hamburgers from the bar. Renovations to the cook kitchen will be phase 2 and will be evaluated for approval based on menu changes and application submissions.
