Comments: No food under preparation during inspection. Operators just arrived on-site with goods from store and were still in the process of storing all items. Operators indicated that first customers usually do not arrive until around 6 pm. Walk-in cooler – sauce 35F (unit thermometer 35F). Open-top food prep cooler – carrots & water 42F, onions 43F. Ansul system tagged July 2018. Product thermometer, sanitizing test strips and disposable gloves/deli paper observed to be readily available for use. Sanitizing solution properly prepared with wiping cloths stored in solution, per discussion with operator. Kitchen, including floor and equipment, utensils, cutting boards and walk-in cooler (including floor) observed to be very clean and well maintained. All raw meats/eggs were observed to be properly stored on the bottom shelves within refrigeration units. Coolers properly equipped with thermometers. Hand-wash sinks properly equipped with soap and paper towels. All food observed to be kept within the facility. Discussed food handling and service requirements. As follow-up to complaints reported in 2017 and prior, no violations exist during inspection to substantiate complaints received; complaints unfounded.
