Turkeys placed within walk-in cooler, in 4 hotel pans on a layer of ice. 11:00am - Turkeys were found @ 104F. Turkeys were within bakers rack in walk-in. Turkeys would not be able to consistently meet cooling curve in current conditions. Recommended roasts be cut in half lengthwise (to increase surface area) and return to cooling on sheet pans (to increase air flow) in walk-in cooler.
