Comments: This report is for the Culinary Kitchen. All deficiencies must be corrected. Temperature of pumpkin purée in the Walk-In Cooler was measured to be about 36 degrees F. The final rinse on the Mechanical Dish Washer read about 180 degrees F. There was a brief conversation with the operators about reduced oxygen packaging (ROP). The operators were informed that before any ROP can be performed they must notify our office in advance so that we can send them the necessary request forms to fill out and submit to our office for approval. Approval must be obtained from the Oneonta District Office before any ROP procedure can be performed at this facility. Report e-mailed.

Comments: No deficiencies observed at the time of inspection. The air temperatures in the Condiment refrigerator was about 32 degrees F and in the Breakfast Refrigerator the measured temperature was 40 degrees F. Food is not prepared on site but prepared at Gilboa-Conesville Central School and transported to this facility. A calendar is kept of the food that arrives from the school and the temperatures of the hot box held food is measured upon arrival. The food is served within 20 minutes of arrival and the lunch is finished 15 minutes later. No food is prepared at this site. Single serving milk, juice and condiments are the only items stored in the refrigerators. Any food that is not consumed by the students is discarded in the garbage. No food is returned to the school. The Breakfast refrigerator is opened only during Breakfast. Report e-mailed.

Comments: Previous issues with mice have been corrected by the edition of enclosed storage cabinets for food and dishwear, no evidence of rodents found at inspection. Temperatures taken of food and in refrigeration are found to be acceptable.

Comments: For the teaching kitchen temperatures found in refrigeration are acceptable. Please note that lunch being served to students is prepared at Gilboa Central School. Food is transported on the buses with the students and is kept in insulated containers until it is served. Operator states that meals don't always arrive at safe temperatures so the staff has been taking temperatures before serving and can reheat food on site if needed. Recommend when food arrives and that temperatures are recorded in a log. If food temperatures are not appropriate this should be reported to Schoharie County Dept. of Health.
