Comments: American Legion - Oneida, inspection conducted Friday afternoon during prep for "Friday Fish Fry." Kitchen and equipment maintained clean and sanitary. Kitchen operations limited to Monday and Friday nights, and random events and benefits. Thermometers installed throughout. Discussed maintenance and repair of floor tiles behind the bar, and the plan to renovate the entire bar area including the bar and walk-in cooler and storage area. The Legion will be installing paneling throughout all walls in the kitchen. Reminder: please submit a Notice of Intent to our office prior to construction.

Comments: The Oneida American Legion, inspection conducted Thursday afternoon. Discussed continuing upgradez and renovatipns to the dining room and bar area. ny additional renovations or upgrades to the kitchen will require the submission of a Notice Of Intent. Discussed N.O.I. requirements with the bar tender and members present during this inspection. The restrooms in the dining room have been completely ronovated. New handwash stickers provided. A dedicated Handwash station is present and adequately maintained in the kitchen. Choking Poster, CPR Station, and Permit are hung.

Comments: Inspection conducted during prep for Veterans Day "Turkey Dinner". Turkey cook temp observed, 190F. Discussed cooking, reheating and holding procedures for "Turkey Dinner". Lunch service time 12-2pm. Discussed: 1) Ongoing maintenance required for ice machine due to its age, 2) Corrosion present on the splash guard (potential medium for mold and/or bacteria growth), but no contamination was observed. 3) Procedures to maintain an accessible handwash sink during kitchen operations. Stem thermometers available and utilized. Hood system professionally cleaned May 2016. Ansul system inspected June 2016. Hair restraints and hand barriers used. Operation complimented for overall cleanliness, process and procedures.
