As pert owner/operator, cheese slices and pepperoni rolls are held for no longer than 2-3 hours. The hood vents were being cleaned at time of insoection. The floorinjg was repaired and replaced in the dining room storage area. Discussed the cleaning schedule for the grease trap, every 3-months, and discussed the possible evidence of a previous grease spill in the basement.

Discussed continued cleaning schedule. All refrigerators have been cleaned and sanitized, thermometers available. Handwash station is accessible and has hot running water, leak has been fixed. The cutting boards have recently cleaned, and discussed continual sanitation of food contact surfaces. A repairman visited and claimed that the dishwasher is working as per specs, but was unable to verify at time of inspection.
