Comments: Comment: Inspection occurred about an hour prior to facility openning. There was a great deal of food prep observed at the various prep stations at that time. Inspector discussed the various "standard operating procedures" with manager and assistant manager related to food preparation, cleaning and equipment maintenance. Based on the last inspection in February, inspector walked into the facility with a significant crowd right at openning, indicating there is a great deal of food prepared and it moves. This degree of food preparation and service maybe why the grease tray below the broiler gets filled up and can lead to a fire incident like what occured last Friday 11/9. However, the incident was minor and food safety was never compromised. This may be the result of the management and staff being well versed and disciplined in food safety and food service operations. Items checked during inspection included: accuracy of metal stem food probe thermometers, proper hot and cold holding, availability of handwashing in food prep area, use of barrier when handling "ready to eat" food, availabiliy and proper concentration of sanitizer for wiping cloths, proper sanitizing by dishwashers, food storage and general sanitation.

Comments: Comment: Discussed preparation processes of various menu items with facility manager. Monitoring critical control points and documenting are part of the standard operating procedures. Facility manager was very cooperative and knowledged in food safety. There was was a great deal of food preparation and serving observed during inspection. Items checked during inspection included: accuracy of food probe thermomter, proper hot and cold holding, availability of hand washing in food prep area, proper cncentration of sanitizer for wiping cloths in kitchen, proper sanitizing by dishwasher, use of barrier by food workers when handling "ready to eat" food, proper food storage, proper storage of in use utensils and general sanitiation. Facility uses a clean dry wiping cloths and sanitizer spray to clean dinning room table tops. The NY Snanitary Code Subpart 14-1.117(c) "moist cloths used for cleaning non-food contact surfaces of equipment such as counters and table tops are to be stored in a sanitizer solution between uses and are to be used only for this purpose." Once cloths become moist they must be stored in sanitizer between uses. Disposable paper towels may be the more code compliant towel for cleaning table tops.

Comments: The dumpster area is being kept clean. When the dumpster provider did not maintain proper covers the operator obtained tarps to ensure covering. The operators travelling inspector has been on site for the last todays. The inspector visits the facility 4 or more times per year. Health department inspector reviewed state waiver with operators inspector. Both inspectors concluded the requirements were being achieved.

Comments: This is the second 2016 routine inspection. The state momoramdeum dated 7/11/16 about time controlled prime rib state wide waiver was reviewed with management. The review indicated this facility does not slow cook overnight; final cook is 130*F for 2 hours or greater; hot holding ambient temperature is 140*F or greater; and reheating of properly cooled prime rib is reheated to 160*F, which is greater than waiver requirement of 145*F for 4 minutes. All waiver provisions are either not needed or achieved.
