Comments: Discussed deficiencies with the owner/operator. The bowl of chicken strips in the Display Cooler was measured to be 39.1 degrees F. Discussed the storage of food in the Upper Compartment of the Bain Marie and the owner decided that they would remove all of the food from this compartment after the restaurant closes Sunday evening and either discard it or transfer it to the Display Cooler for longer term storage. They will be open only Friday through Sunday from 4:00 PM to 9:00 PM from now until April or May of 2016. Report e-mailed.

Comments: Temperature taken; Two glass door Coca cola cooler used to store food at rear of kitchen has Cheese slices at 39 F. Bain Marie has sliced tomatoes at 42F on top and sliced onions below are at 45 F. Discussion: in the Coca cola cooler there are two large stock pots, one 9 inches high by ten inches across and the other 10 inches high by 12 inches across, The pots are filled to within two inches of top with beans that were cooked previous day and then reheated today, current temperatures are 58 F for the larger pot and 72 F for the smaller pot. Explained with operator that the pots used to hold the beans are too deep and that the beans should be placed in shallow containers to allow for proper cooling before returning to refrigerator. Notes; Expansion of seating was submitted to office and renovations were approved by code officer in June 2013. Seating expansion in original grocery area to accommodate 3 booths for 4 adding a total 12 seats. Pre existing were 7 counter seats additional seating added is now 19 in front and 22 in rear portion for a total of 41 seats.
