Comments: Comment: Items checked during inspection include: accuracy of food probe thermometer, proper hot and cold holding, availability of handwashing in food prep area, proper concentration of sanitizer for wiping cloths proper sanitizing of dishwasher, proper food storage and general sanitation. Lack of Proper sanitizing by dishwasher was cited during inspection. Please contact inspector once dishwashing unit has been repaired. This should be done ASAP. Kitchen manger stated facility will be under going cosmetic improvements in the kitchen in the near future. Inspector will send "Notice of Intent" form which must be submitted to Health Department 30 Days prior to the commencement of any work done in kitchen.

Comments: Comment: There was a shift change at the start of inspection. Staff were observed switching sanitizer buckets. Proper Concentration of sanitizer was checked. Facility managers check and document hot and cold holding temperatures twice a day. The day before Thanksgiving Holiday, kitchen was quite busy with a large volume of food cooked and served. However, grease film, dirt and food debris in remote corners (floors and surfaces) of kitchen indicate routine cleaning in those places does not occur often enough. Manager and staff were very cooperative during inspection.
