Comments: 1. Choking poster was not publicly displayed at time of inspection. Per interview with the operator the door that the poster was attached to had recently been broken and was in the office behind the main desk and will soon be put back into place. A new poster was given to the operator for use until the door with the choking poster attached is put back into place. 2. Milk in the refrigerator had a temperature of 40°F. 3. A poster with the location of the CPR equipment was given to the operator at time of inspection. CPR equipment is readily available onsite. Operator was instructed to fill in the CPR equipment poster and publicly display it. 4. The Men’s and Unisex bathrooms do not currently have self-closing doors. 5. Multiple thermocouple thermometers are available onsite.

Comments: ORDA is considering expanding food service operations at ski jumps and using ski jump kitchen as possible prep kitchen for XCountry venue. Completed field visit of ski jump kitchen with Rebecca Dayton on October 14, 2014. For 2014-2015 season very little construction would be completed to get things going. Items listed in this report would be required. Menu would be limited to cook and serve items and soup and chili based on limited refrigeration space. An ice machine is present so soups and chills can be cooled with ice bath as long as cooling logs are kept on-site. Would encourage use of a thermocouple thermometer. Have requested ORDA keep DOH updated on plans as they evolve so all parties agree on what is needed and what level of service can be provided. Please submit Notice of Intent Form to our office and sketch of modifications for review and approval prior to construction. A pre-operational inspection will be needed prior to opening new kitchen. Future plan may include larger kitchen expansion and renovation.
