Following the informal hearing of today, and this re-inspection, this Department has allowed the New ChinaTown Restaurant to open back up. Another re-inspection will be scheduled. Re-inspection notes of today: 1) 3 bay sink now drains properly, 2) hot water now functioning and measured today by this Department at 140F, 3) both hot and cold water appear to have adequate flow from the 3 bay sink, 4) Xiu M Zheng reports they have read the chinese version of our food servcie code but will read again, 5) owners report the chopped garlic will remain stored in oil but will be kept refrigerated in the main prep station near the stove top, 6) see additional directive notes on the letter prepared regarding the informal hearing of today. |

Prior to returning to operation the following must be corrected at a minimum: 1) the 3 bay sink must have hot and cold running water with adequate pressure, 2) the 3 bay sink must drain properly and be completely cleaned. 3) The washing procedure must be corrected to be adequate by washing in the 1st bay with hot water 120F with soap or detergent, then rinse in 2nd bay with clean clear water, then sanitizie in 3rd bay with one-minute soak of all wares in a chlorine (plain bleach) solution with water at 100 ppm - I have provided strips to check the strength 4) all wares, bowls, pot, pans, food prep surfaces must be washed rinsed and santized, 5) Sanitizing buckets with clean towels are to be available and in use with 100 ppm chlorine residual, 6) the main prep station must be operational and holding proper cold holding temperautres <45F, and 7) you must have knowledge of the rules of the Food Service code.
