Comments: Part 1: One critical violation observed Part 2: No violations Board of Health action to Follow comment: Pizza hot holding cabinet has a temperature gauge that was reading 140*F. Inspector utilized the facility's thermoprobe to take temperatures and compared these to the inspector's thermoprobe. Both devices yielded readings that were within 0.5*F of each other. Inspector suggested that staff utilize their own thermoprobe to ensure correct operating temperature of cabinet. Also discussed having reasonable working quantities of temperature controlled foods out of refrigeration while also carrying out other customer service tasks to avoid foods being out of correct temperature. |
