The dipper well has been changed from hot holding to a flowing dipper well with an indirect drain. The new set up was working nicely. The walkin freezer was being used for rapid cooling of soups in conjunction with frequent stirring with an ice wand, but temps were not always monitored by staff. The tender batter procedure has been amended to keep the batter below 45*F (ice is periodically added to the batter). Doors have been added to the popcorn machine inside the waitress service area. All of these changes were direct results of the first inspection and show great progress and improvement. |
