Comments: All cold holding temperatures evaluated acceptable - Raw chicken within walk-in cooler @ 42F. All hot holding temperatures evaluated acceptable - Cooked chicken within hot holding unit @ 150F. Chicken pot pie @ 174F. Some new ceiling tiles and floor tiles present During inspection it was discovered that facility par-cooks chicken tenders. Chicken tenders are fried for 15 seconds @ 365F. Once cooked for 15 seconds they are removed. Took temps of chicken. Chicken ranged from 60-160F. Procedure states that once tenders are par-cooked they are to begin 6 hour cooling curve. First 60 minutes of cooling curve is allowed to be at ambient temperature. Once cooled properly tenders are then cooked for 3.5 minutes at 340F then served. Collected copy of corporate SOP for par-cooking chicken tenders. Operator believed KFC had a State issued Waiver to allow par-cooking of their tenders, but did not have a copy on site.
