Comments: Good Nature Brewery, inspection conducted Friday afternoon. Discussed response letter from MCDOH regarding conference room to prep kitchen conversion. Staff uses the prep kitchen to: make pizza dough, and prep potato chips. Hair restraints and hand barriers utilized. Thermometers installed throughout. The glass washer at the bar is no longer used; 3-bay cleaning operation reviewed and sanitizer adequate.

Comments: Good Nature Tap Room, inspection conducted Friday post-lunch rush. Hot holding soups found at 141F. Cold holding prep cooler items at adequate temps., 37-44F. Discussed prechilled ingredients, options and procedures, especially when dealing with seasonal salads. Hair restraints and hand barriers are utilized. Digital stem thermometer used. Meat slicer found to be adequately clean. Discussed with owner, the procedures and routines for all kitchen equipment and storage areas. Hood is scheduled to be cleaned next month, no issues observed. The mechanical glass washer at the bar is no longer used and will soon be removed. The "bug zapper" has been removed from the kitchen and prep areas. Discussed with owner, M.W.; the planned/anticipated upgrades and renovations: a new prep area in the conference room, removal of the glass washer, and install of an additional 3-bay sink, and use of the outdoor "grill area" for cooking. Beer cooler keg-lines are cleaned each week. A Notice of Intent will/shall be submitted prior to start of work.

Discussed possible addition of food preparation kitchen; MCDOH requires notice of intent and diagram/plans prior to installation of proposed kitchen. Glass dishwasher at bar is used minimally; three compartment sink is typically used.
