Pulled chicken reheat temp adequate, 197F. Cold holding unit items found at adequate temps; cookline cooler guacamole 37F, prep cooler diced tomatoes 40F, and walk-in cooler refried beans 40F. Handwashing station adequately maintained. Discussed sick worker policy, provided additional "Sick Food Worker" educational material. Thermometers installed throughout. Hair restraints and hand barriers worn. Dishwasher temp adequate and sanitizer available. Discussed the owner's plan to fix the kitchen tile floor, and the future work needed to the walk-in cooler floor. Owner/operator is complimented for overall cleanliness and procedures.
