I asked two employeeshow big it was. One guessed 24lbs, another guessed 19lbs. I temped the center at 42dF. The roast had been cooked the previous night. I reviewed cooling guidelines with employees, but in this instance, because there was no evidence of improper cooling, did not discard the roast. The employees stated that cutting the roast multiple times would compromise the flavor. A HACCP arrangement was made, and proper cooling of the roast willbe evaluated. Due to the cooling of foods, recommend facility be reclassified as high risk. |
