The inspector and the chef discussed the necessity of having locally sourced raw shell eggs properly labeled with name of the source, quantity and grade of eggs. The inspector and the chef also discussed the regulation that wild mushrooms must be obtained from commercial sources. They must be cultivated, grown, harvested and processed in a regulated commercial operation.

Discussed cooling techniques used, no cooling logs were available. Cooling logs must be completed at least once a month. Discussed use of drink glasses and tumblers used for making drinks at the bar - you can rinse between uses and then wash, rinse, sanitize at set time intervals not to exceed 2 hours or wash, rinse, sanitize when there is a break in use. Make sure that the CPR equipment is visible to the patrons or have proper signage for patrons to read that indicate where this equipment is located.
