She was observed preparing pasta salad. The ingredients in the pasta salad included: cooked tri color rotini, chopped carrots, broccoli, celery, cucumbers, canned olives, red/green peppers, onions., pepperoni (which she keeps refrigerated at 45 degrees F. or below, cheddar brick cheese, and commercial shelf stable Italian dressing. Operator indicates that if pasta salad is left after an event (or any other food), it gets discarded. Reviewed foods served for parties tomorrow; cold meat platters are store bought and kept in refrigerator below 45 degrees and placed on cold hold table at 45 degrees for about an hour, then discarded. For the hot foods (which include meatballs, goulash, frankfurter whinnies and chicken wings, operator indicated that these will be prepared tomorrow. Cooking temperatures were discussed with operator, and like the cold foods, the hot items will be placed out for service for one hour and kept at or above 140 degrees F. Operator has a digital thermometer on premises. |
