Comments: Ribs 168 °F, baked beans 167 °F, Coleslaw 40 °F was served for the day. Food was delivered frozen and placed in the oven for reheat. Recommend floor cleaners and other cleaning supplies do not get stored above the 3 bay sink. They were moved at the time of inspection.

If the dishwasher is replaced your must submit specifications to our office for approval prior to purchase or installation.

Comments: Menu consisted of cold pork, lettuce and tomato sandwiches, Waldorf salad, and melon. Ice tea is served as the beverage. Per interview with operators, food items' temperatures were taken at delivery time and records indicated they were in the acceptable range. Food temperatures taken at time of inspection, with DOH thermapen were also in the acceptable range. Education was given on proper cold holding techniques of potentially hazardous food and educational materials were given to operators. Meal is served family style and one operator monitors service of food items. Please pay close attention to quantity of disposable gloves to unsure that enough are on hand for food preparation/service.

Comments: Operator indicated she had received foods for service that were in refrigerator at 10 AM. from main OOA Office in Elizabethtown. THe food items stored in shallow metal pans were measured with DOH thermocouple thermometer. The foods measured were egg salad at 36 degrees F. and dry beef barley measured at 29 degrees F. Operator indicated she arrives at the site early to start preparing the foods delivered at 3PM for service at 5 PM. Discussed proper reheating temperature of the beef barley to 165 degrees F. after adding water to the dry beef barley in the refrigerator. After using digital thermometer on premises to ensure the soup is cooked to a minimum of 180 degrees F., the operator said that she would allow the soup to simmer on the stove to maintain at 165 degrees or higher until patron service would start at 5 PM.
