Comments: Conducted on-site re-inspection of coolers. Prior inspection identified issues with the flip-tops (2). Bottom of flip-top is at or below 45°F. Several items on top of flip-top where marginal, within 1°F accuracy of thermometer. Suggest installing a thermometer on top of flip-top so staff can monitor both top and bottom. Staff are logging temperatures, but they are tracking the ambient temperature of the units. Ambient temperature may not reflect the temperature of the actual food items stored in unit. Suggest measuring actual temperature of foods.

Comments: 1- Stainless steel carafe of half-n-half stored on table top in coffee area at room temperature. Carafe has ice in it and milk temperature measured 38°F. Since employees can’t monitor ice thru carafe, a time card system is required. TPHC waiver can also be request for a 4 hour discard time. 2- Repair or replace coolers and contact Glens Falls Office with receipts of correction. 3- Failure to correct all violations in a timely manner may result in enforcement action.

Comments: 1- Discussed with operator sanitizer dispenser issue. 2- Discussed whipped butter requiring refrigeration. 3- Insect zapper in back preparation room located on wall adjacent to chest freezer and slightly above a large plastic container of what appears to be granola. No signs of contamination, granola covered. Suggest re-locating equipment to prevent contamination.

Comments: Note: The dishwashing sanitizer bottle was not hooked up at the time of my inspection of the bakery. The bakery was not in use at the time of my inspection. Note: Some items in the deli slide top cooler temped above 45F but employee Sarah stated that the employee on the prior shift had done a lot of prep and that several of the items would have been in and out of the cooler. Please ensure that the deli cooler is operating properly to cold hold potentially hazardous food items at 45F or less. All violations must be corrected or enforcement actions may be pursued.

Comments: Comment only: Food temps ranged from 40 to 47 degrees F in the front area display cooler. Foods that were closer to the back wall of the cooler were colder than foods that were stored towards the outer part of the shelves. Must ensure that all foods that require refrigeration are held at 45 degrees F or less at all times. All remaining violations must be corrected no later than 10/13/15.
