Comments: Comment only: In discussion with Mark, he is using a hand held strainer to wash and drain chic peas and other beans over the 3 bay sink. The strainer is never placed in bottom of sink, it is always held in an employee's hand during the washing period. If this practice is strictly followed and remains unchanged, meaning no produce is washed, then an indirect drain for the 3-bay sink will not be required. All produce, such as lettuce, tomatoes, peppers, broccoli, etc arrives pre-washed. Must correct all violations no later than 12/9/15.
