Manager stated soups left in hot holds at end of night are put into food safe bags at holding temp (about 170F, Panera standard), immediately closed/sealed and submerged in ice bath to 40F-typically 2 hours, then placed in the walk-in cooler overnight. Reheating is then done the next day by placing the bags into the rethermalizer (hot water bath unit) typically 45 mins to 1 hour, to 170F (Panera Standard) then put back into hot hold units for service. Food testing thermometers ok. Quat sanitizer 200ppm in wiping buckets-ok. Handwashing and glove use ok. Hair restraints ok. All coolers and cold holds <45F, all hot holds >165F. Discussed proper reheating to 165F w/in 2 hrs. Chemical dish machine sanitizing to 50ppm bleach ok. Restrooms ok. "Catering" is just drop-off delivery. Gave and discussed Food workers sick policy and gave Basic Food Safety Class schedule. Choking poster and CPR kit/sign ok.
