Comments: Discussed deficiencies with the owner. The ceiling and three of the walls in the Walk-In Cooler were refinished by the owner and the rust has been removed, leaving a smooth, cleanable surface. Measured the temperatures of three trays of Chicken Wings in the Walk-In Cooler and obtained the following (Degrees F): 39.7, 39.3, and 39.5. The Air Temperature of the Walk-In Cooler was measured to be 34 degrees F and that of the Bain Marie was 35 degrees F. The piece of Cooked Roast Pork in the Bain Marie bottom compartment was measured to be 38.7 degrees F. Report e-mailed.
