Comments: Discussing with operator the importance of proper raw food storage in all refrigerators. Sushi rice found at sushi bar between 98 and 101 degrees. Rice was being controlled with time, rice was said to be cooked at 12:00pm and will be discarded by 4:00pm at the latest. Time as a public health control waiver request was explained and completed to at time of inspection.

Comments: Temperatures taken of items and in refrigeration were found to be acceptable unless otherwise mentioned. Note: Chest freezer at front of the kitchen has warning light flashing "temp alarm". Employee states that repair has already been called The unit still contains about 1/3 of it's full capacity of food mostly scallops and shrimp which are still somewhat frozen temp is 26 F.
