Temperatures of cold held food were measured to be about 45 degrees F or lower, and Chicken soup cooked on the stove was measured to be about 205 degrees F. Strongly encouraged the operator to lower the air temperature on the Display Coolers so that food can be held at about 40 degrees F, to compensate for the frequent opening and closing of these units during the day. Comments: Temperatures adequate throughout coolers/freezers at 40 degrees and below. Tuna salad temped in clear reach in cooler 46 degrees. Extinguisher inspected 2016. Gloves being used to handle ready to eat foods. Jack stated that he recently bought building and will be completely remodeling the majority of it. Discussed his need to submit plans with DOH prior to starting anything and he was aware. Jack is also considering expanding into dinner service, beer, wine with the remodel. He stated that he has floor tiles to fix areas that are damaged, but he is waiting for the new cooler to be installed before he fixes the floor. The display cooler was not working at time of inspection and owner stated that a new one is being delivered and installed tomorrow.
