Comments: Discussed deficiencies with the operator. Cold held items were measured to be below 45 degrees F and hot held food items were measured to be above 140 degrees F. The Fire Suppression System was inspected in July 2015. Engaged in a brief conversation with the cooks about cooling techniques. Dish ware must be manually sanitized according to the procedure described in Item 11A until the Mechanical Dish Washer is repaired and a sanitizer residual of 50 ppm chlorine is able to be maintained. Report must be mailed.

Comments: The following items in the Upper Compartment of the Sandwich Cooler were measured (degrees F): Sliced Tomatoes - 42.4, Cooked Sausage Patties - 44.6. The temperatures are now satisfactory for the potentially hazardous foods stored in the Upper Compartment of this cooler. The operator said that they had the compressor cleaned and the temperature adjusted so that they are now able to maintain an acceptable temperature. Report e-mailed.
