Comments: 5A & 5E--Ambient Air Temperature of walk-in cooler is 62 degrees F According to the cooler thermometer and the inspector's thermometer. According to the kitchen manager, when she arrived to work this morning she was notified that the cooler door had been left open all night. All Potentially Hazardous Food temperatures were measured using the inspector's digital thermometer. --Eggs - 60 degrees F. --Raw Chicken Breast - 62 degrees F. --Soft Cheeses - 62 degrees F. --Deli Meats (ham, turkey, cooked chicken, salami) - 58 - 60 degrees F. --Whole Milk - 60 degrees F. --2 % Milk - 60 degrees F. Kitchen staff voluntarily discarded all products. Corrected. 11A--Quat sanitizer in spray bottles and what was coming out of the meter was not registering any reading on the quat test strips. A bucket of sanitizer @ ~100ppm cl is made and chlorine will be used until the company comes to fix the meter.
