In there less than 2 hrs per cook. reheated. unit was set on low and turned up. corrected

Toast was dicarded and gloves were put on. and corrected 15b- exhaust fan above hot holding area still has dust debris 15a- floor in back room is made of concrete and is not smooth and easily cleanable 7f + 2e- at time of inspection, this inspectortemped chili 103dF, split pea soup 106dF, french onion soup 131dF, and gravy 113dF. Spoke with cook who said she reheated them in microwave but did not temp them prior to going into hot holding. Discussed taking temps prior to putting foods into hot holding and monitoring during holding
