Discussed proper cooling procedures with owner, dumplings were moved to shallow, wide pan to finish cooling. Chemicals stored on the floor in dry storage room. Discussed with the owner, chemicals were moved to an area that did not contain stored food. Floor under a shelving unit in dry storage had a large amount of dust and debris. Requested that owner have someone clean underneath the unit. Dry storage room contains a large amount of old and unusable equipment and utensils. Requested that owner remove these items from dry storage to reduce potential areas of harborage.
