Comments: Re-inspection following inspection on 3/6/18. Serving trays and utensils are no longer being washed at the hand wash sink near the service counter. No utensils or dishes observed being washed or air drying at the hand wash sink at time of inspection. Owner states all dishes and utensils are brought to the back kitchen three-bay sink to be washed-rinse-sanitized. As per interview with owner, plastic buckets used for saucing chicken wings are being washed when food preparation is not taking place or every two hours. Clean sauce buckets found stored at the chicken wing prep station and not clean sauce buckets found in the three-bay sink at time of inspection. Table beneath slicer located in the kitchen adequately clean; no food debris observed. Owner states food workers are routinely cleaning beneath the slicer. Sides of double burner unit located behind the flat top grill adequately clean. Gap previously observed near the door knob on rear exit door has been filled in; no light observed coming through gap. New door sweep as been affixed to the bottom of rear exit door. Wall behind chest freezer and fryers adequately clean. Floor beneath the fryers adequately clean; no grease accumulation observed at time of inspection. Owner states food workers are pulling out fryers once per week to clean floors and walls. Blakeslee mixer covered with clear plastic bag found stored in kitchen. At time of previous inspection on 3/6/18, manager (Jillian) stated Blakeslee mixer is not used for food preparation. As per interview with owner at time of inspection; mixer is operational and available at the facility as back up to mix dough. All outstanding violations to be corrected within 30 days of inspection unless otherwise noted. Owner shall contact this Department upon corrected of all violations. (2)
