Comments: At beginning of inspection, observed kitchen employee assembling sheet pan of cheese sandwiches without using plastic gloves. Instructed employee that plastic gloves should be used when working directly with ready-to-eat or cooked potentially hazardous (TCS) foods. Because the cheese sandwiches will be subsequently cooked as toasted cheese sandwiches (per employee), bare-hand contact would not be considered a critical violation but that gloves are recommended to eliminate unnecessary hand contact even prior to cooking the toasted cheese sandwiches. Employee put on plastic gloves to finish assembling cheese sandwiches prior to cooking in oven to +140 dF using numerical thermometer. Checked Free Chlorine residual at kitchen sink- 0.6 ppm, did not take water sample during inspection. Observed chlorine test kit at kitchen sink for checking dish ware washing and wiping cloth sanitizer. Numerical thermometers available for evaluating cooked potentially hazardous (TCS) foods. Plastic gloves available along with proper utensils. All refrigerated storage equipment which contain cold potentially hazardous (TCS) foods equipped with monitoring thermometers and were operating below 45 dF. Discussed routine hand washing with employee during inspection.

Comments: Checked Free Chlorine level at kitchen sink- 0.6 mg/L. Water sample was not taken during inspection. Checked wiping cloth solution- +100 ppm, Chlorine test kit was available for checking wiping cloth solution (recommend replacing chlorine test kit at kitchen sink- is difficult to read comparison chart on test kit- is faded). Digital thermometer available for evaluating hot potentially hazardous (TCS) foods, other numerical thermometers are also available in kitchen. Plastic gloves and proper utensils available for use by kitchen staff, discussed use of gloves and discussed routine hand washing with Manager during inspection. Monitoring thermometers available in refrigerated equipment used to store cold potentially hazardous foods. Also discussed cooling of cooked potentially hazardous foods with Manager- limiting food depth to 4"inches or less, using flat rectangular pans and leaving foods uncovered while cooling inside walk-in cooler. Will conduct a HACCP training exercise with Manager later in year.

A re-inspection will be conducted after this date to determine compliance. Discussed routine hand washing and proper use of plastic gloves with Kitchen Manager (Maureen Gustin) during inspection. Also discussed proper cooling of cooked potentially hazardous foods with Manager during inspection. Water sample was not taken during inspection.
