Sliced American cheese in same unit had a temperature of 38F. Lid of make unit was closed throughout inspection, only being opened to prepare sandwiches. All inserts of make unit had covers. Cooked sausage patties in hot holding unit, above sandwich make unit had a temperature of 158F. Small beverage cooler across form sandwich make unit had monitoring thermometer reading 38F. Small singe service packets of Ultra Pasteurized cream in beverage cooler had a temperature of 39F. All handwash areas were stocked with warm water, paper towels. and soap. Observed all wiping cloth buckets with sanitizer (quaternary ammonia) at 200 ppm, per facility's test strips. |

Item 15A: Floors, walls, ceilings, not smooth, properly constructed, in disrepair, dirty surfaces Comments: Observed employee portioning prepackaged ham in small, manageable quantities and stacking into plastic ninth sandwich make unit inserts within 10-15 minutes of bringing meat out of cold holding. Facility had functioning digital thermometers. Observed staff wearing gloves when handling ready to eat foods and washing hand properly between glove changes. Pest control operator was at facility earlier that morning and reported no signs of pest issues in facility. Cheese and sliced deli meats in cold holding sandwich make unit were 41F. |
