Comments: Food temperatures in the Coca Cola refrigerator (on the bottom shelf) were marginal. A 5-gallon pail of chili stored in this location was 46° F. A half gallon sized container of cooked rice was 47° F. Other foods stored on the upper shelves of this refrigerator were: mung beans = 41° F, Humus = 40° F. Discussed monitoring food temperatures in this refrigerator. Discussed cooling of foods such as chili and soups that are made on-site. Cooling logs that were observed were not complete (did not go to 45° F or less). When cooling foods, they should be 40° F before being stored in the Coca Cola refrigerator. Other food temperatures measured were acceptable: soup = 162° F, 3 bean chili = 190° F, sliced tomatoes = 45° F, cooked eggs = 42° F, sliced provolone cheese = 42° F.
