Observed, checked and discussed the mechanical dishwasher; a new thermometer was installed, observed at adequate rinse temp 135F, and sanitizer present. Discussed outdoor operations under the gazebo, once per month, and for catered engagements. Owner and bar staff is complimented for ice maintenance and sanitary procedures behind the bar. Owner/operator is complimented for overall cleanliness and procedures.
