Discussed procedural changes for salads and maintaining adequate cold holding temps, in response to last inspection. Hair restraints and hand barriers are worn by all. Thermometers are installed in all refrigerators/freezers. The faucet at the cookline designated handwashing sink has replaced. Discussed routine and procedures to check the mechanical dishwasher temperature and sanitizer presence. Digital thermometers available and used. Temp logs maintained throughout.

Low temperature mechanical dishwasher operated in accordance with manufacturer instructions; wash temperature at 160 degrees Fahrenheit, final rinse temperature at 145 degrees Fahrenheit and sanitizer at 50 ppm. Hand wash sink nearest food service cook line has been repaired. Floor of walk-in refrigerator/freezer is adequately maintained. Facility is clean and well organized.
