As per interview, the only item being cooled from cooking to below 45*F is rice. The logging of cooling rice was started by inspector. The continuation of the logging was done by the cook. Cook and operator agreed to continue using cooling logs and kept them for review at the next inspection. The cook, with inspector demonstration and prompting was able to calibrate, and sanitize a thermometer to monitor all active critical control points. |
