Comments: Comment: No violations observed. Facility posts Food Safety policies and procedures on the wall that are readily available for for all staff. These include Norwalk Policy, Blanching of vegetables, Station cleaning, cleaning pure hard surfaces and Ill food worker policy.

Comments: Comment: Discussed cooking process of chicken on flat top grill with food handler and manager. Cooking temperatures between 165F and 172F determines when chicken is pulled from grill not time. Facility also, maintains labels on processed food items for time contolled quality. Well run operation. Items checked during inspection included the following: accuracy of food probe thermometer, proper hot and cold holding on line, proper sanitizer concentration for wiping cloths and sanitizer bay at three-bay sink, availability of handwashing in food prep area and in bathrooms, proper garbage disposal and general sanitation. Also, discussed food preparation with various staff members, all individuals sounded quite knowledged in facility procedures which, very often surpasses Sanitary Code requirements.

Comments: Comment: Facility has established policies and procedures that are followed that ensure a safe and sanitary food prep setting. Facility Manager did provide hot and cold holding temperature logs. Discussed onsite prep process (merinade, sere and hot hold) of sous-vide precooked steak. Facility was quite busy during inspection.

Comments: Comment: Discussed with manager any policy changes in food preparation as a result of recent reported illness associated with facility franchise. It was learned that food safety audits that were formally conducted by District manager are now done daily by facility personell. All produce that requires processing is first blanched in boiling water for five seconds. Cilantro is now washed with citrus juice. Card board boxes containing food items are now placed on a barrier tray when placed on work counter. Wiping cloths that have been used with multi-purpose cleaner are no longer used in sanitizer at the same time. Proper cooling with ice bath was observed in walk-in cooler. Manager provided a copy of a completed Food Safety Audit form and temperature log to inspector. Well run food service operation.

Comments: Comment: Inspection was the result of recent complaints of gastro intestinal illnesses reported by the college student population to the Health Dept with the common variable being recent consumption of subject facility food. Discussed issue with facility manager. It was realized there is a large number of students that frequent facility and there are multiple avenues for illness to spread through such a social population. Like the last facility inspection in June of this year, there were no violations observed. Accuracy of food probe thermometer was verified, proper concentration of sanitizer was verified, hand wash stations were checked, proper hot and cold holding was checked. Discussed critical control points involved with preparation various menu items. Facility was busy during inspectipn but, well maintained and clean. Based this inspection, a connection to recent illness complaints can not be established.

Comments: Comment: No violations observed. Discussed with the manager the flow of food for various menu items, steak, chicken, carnitas and rice. Facility has established procedures to ensure safe food such as regimented sanitizing between various stages of the prep process, limited hold times, end of the day discard or donation to the harvest program. File review indicated procedures for all aspects of food handling and Manager sounded very knowledgeable in those procedures which promote sanitation and safe food. Also, verified accuracy of food probe thermometer, proper sanitizer concentration, proper hot and cold holding and general walk through facility. Well run operation!
