Comments: Comments only: 1. "Tom Cat Spin Trap" found in cafeteria soda & candy storage room. Unsure if this is a rodent trap that contains poison. To follow up. 2. Food temperatures varied from 36 - 47°F inside the upstairs kitchen single door sauté cooler. As precaution, staff moved all food that requires refrigeration to another cooler. Informed staff to monitor food temperatures closely inside this cooler. 3. Food temps inside the upstairs kitchen waitstaff cooler are recorded between 45 - 46°F. This cooler is overstocked with product and is a possible reason why food temps are high. Advised staff to remove some product and remove the abundant amount of flat trays that are in this cooler blocking air flow. Please monitor food temps closely. 4. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.

Comments: Comments only: 1. I cannot tell if the right side ice bin at the bar is equipped with an indirect drain to waste. The drain hose goes into the bar. Please report back to me whether or not this ice bin is equipped with an indirect drain. 2. A hand soap dispenser is mounted over the 2 bay food prep sink. Although there was no food in the sink at the time of the inspection, please keep in mind that during food prep in this sink, you risk the potential for cross contamination if the soap dispenser leaks soap onto food items. Please move the soap dispenser to an approved location. 3. The Waffle House is not in operation for the 2016 season. In discussion with Mickey Hopkins, the plan is to move the Waffle House to another building for the 2017 operating season. Reminded Mickey that plans must be submitted to the Glen's Falls District Office before any modifications take place. Must correct all violations no later than 2/29/16. Must send Corey DiLorenzo an email to [email protected] addressing corrective actions taken to all cited violations no later than 2/29/16.
