Directed employee to inquire with DOH as to the proper procedure for equipment approval. Walk in cooler temperature borderline; ground beef and cheese slices temped at 47 degrees. Talked with Joe on phone and he stated that walk in condenser had frozen the previous night and he was contacting repairman to fix cooler. He directed employee to remove all items from walk in and place in reach in coolers until walk in unit is fixed, which should be by the end of the day. Discussed with employee proper use and storage of extension cords. Discussed with employee proper cooling of large pieces of meat, such as roasts. *******Owner is to call DOH office when walk in cooler is repaired and when probe thermometer is acquired within 24 hours.**** Please mail report.

Comments: The facility has been cleaned, with dishes no longer placed on shelves, the litter removed from the floor, and food/beverage items stored on shelves/crates off the floor. The Walk-In Cooler has no litter on the floor with food/beverage items now stored on wire shelves. The ceiling is still leaking water from the roof but no water is dripping on any food. Garbage is stored in covered containers that are no longer full to overflowing. Encouraged the operator to maintain the facility in this condition on a regular basis. The operator stated that the check that he sent to us for Chambers Auction Barn in Unadilla has been cashed and he was wondering about his permit. He also mentioned that he is considering purchasing a facility in Delhi and asked about the requirements for a Mobile Food Unit. He plans on using the Mobile Unit to serve food at Walton High School football games and at various Delaware County events. He also discussed purchasing a Food Service at an auction barn in Schoharie County. Report e-mailed.
