A large number of food containers are kept on ice at the cook line area. All foods temped below 45 degrees F, but Patrick stated he just removed the food containers from the walk in cooler about 20 to 30 minutes prior to my arrival. Must make sure ice is packed up and around entire portion of each food container in order to keep it properly cold held at a temperature of 45 degrees F or less. 2. Patrick just took a soup off the stove and placed it into a large container (greater than 4 inches deep) and was going to place it in the walk in cooler. Provided proper cooling education. Patrick immediately placed container of soup in an ice bath. Issued management "Cooling and Reheating" guidance brochure.
