Comments: Comment: A tremendous amount of food is prepared in the kitchen especially, in the summer when there is additional outdoor seating. According to last year's inspection, operator had intended to replace some equipment and do some up grades in the kitchen. As result of some recently discovered Builing Code issues with the electrical panal boxes that serve the whole building located at the back dry storage area; there was some construction activity undertaken to get the building's electrical system up to code. The operator took this opportunity to expand the food preparation area to meet the demand of his business. This does require Health Department review and approval. Operator must submit plans that specify wall, floor and ceiling surfaces and layout sketch, to scale, that shows equipment location by Friday March 8th.

Comments: Comment: Food service was relatively busy during inspection. It was quite apparent food does move off the line. Food service staff appeared seasoned and well versed in food safety which is important considering how much space is available in kitchen to prepare food. Operator, stated he is going reorganize kitchen layout with a new refrigeration unit and replacement of existing pizza oven. No changes to menu. Inspector left "Notice of Intent" form and requested a new layout sketch from operator. Items checked during inspection included: accuracy of food probe thermometer, proper cold holding, availability of handwashing in food prep area, use of barrier (gloves) when handling "ready to eat" food, proper concntration of sanitizer for wiping cloths, proper sanitizing by dishwasher, poper food storage and general sanitation.

Comments: Comment: Facility food preparation was quite active during inspection. Coolers and equipment throughout kitchen appeared to be routinely cleaned. It was learned that each food prep station operates using a check list to ensure daily cleaning. Improper Bare Hand contact signage was posted in kitchen. Well run operation. Floor may need to be replaced in the future. Screen door for back door into kitchen is not self closing with good seal. It will require manual closure during warmer months with trash receptacles located outside doorway where flies will be present.

The statement represents intentions, committment and methods capable of achieving operators responsibilities. Operator requested a reinspection to show his intentions will be applied. The statement represents the expected outcome of formal enforcement of an imminent health hazard; therefore formal enforcement should not be required. Reinspection will show if expected outcomes are achieved.
