Comments: All food temperatures measured during the inspection were within the acceptable ranges. The onsite dishwashers were working in accordance with the manufacturer specifications. Our office needs a copy of the approved Scheduled Process for bottling barbecue sauces onsite.

Comments: Proper cooking, cooling and reheating procedures were discussed for various food items with onsite staff. The mechanical high-temperature dishwasher in the main kitchen was observed working in accordance with manufacturers specifications.

Comments: A vacuum sealer was observed on a table adjacent to the smoker in the basement. As discussed with the chef the vacuum sealer had previously been used in the process of marinating tofu. Also as discussed with the chef and operator, all vacuum sealing of foods needs to cease immediately until an approved process and waiver has been granted from the NYS Dept. of Health. The application for the waiver and the directions for filling out the application was emailed to the operator during the inspection. Once completed, email the application to our office.

Please contact our office prior to doing any construction of the new kitchen to ensure that all design aspects meet the NYS Sanitary Code. Additionally, a Notice of Intent form will be emailed to the owner momentarily and needs to be completed with all pertinent information for the new kitchen.

Comments: All violations from previous inspection on 10/05/15 have been corrected except for part of 15B--see report listing of repeat violation. Food temperatures measured with DOH thermocouple thermometer--pastrami 43 degrees F., three brisket pieces--38, 41 and 43 degrees F., grape tomatoes 41 degrees F., Asiago cheese 44 degrees F., coleslaw 43 degrees F., marinated pork 155 degrees F., mashed potatoes 151 degrees F. As per operator, main floor women's room had backed up late Saturday night and a local company was called (G &S Plumbing) on Sunday (12/20/15), but no one responded. Operator indicates they are expected to come today or tomorrow. The facility does have another women's room available on premises on the top floor. Operator was requested to contact the office at 518-891-1800 when repairs are made to the main floor women's bathroom and to save the receipt. The establishment is using written hot holding logs for foods hot held in the kitchen. Operator is advised to perform this on a regular basis so establishment has a regular record of hot holding temperatures for review..
