Comments: Comments only: 1. Using a metal stem probe thermometer, cooked chili located on buffet line was temped towards the top at 138°F. When this was brought to management’s attention, manager promptly stirred the chili and temped chili using a metal stem probe thermometer at 155°F. Provided education to manager. When NYS Department of Health employees are performing inspections at food service establishments, inspectors are not supposed to stir the food product before taking an internal temperature. This inspection practice is performed so the inspector receives the actual internal food temperature at the time of the inspection. NYS Department of Health strongly encourages employees to routinely stir foods while hot or cold holding, but when inspectors are trying to perform inspections to get an accurate reading of internal food temperatures during the actual inspection, inspectors are not to stir food product prior to taking internal food temperatures. 2. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.

Comments: Comments only: 1. Thermometer located inside "Back Kitchen Reach-in cooler" reads an inside ambient air temperature of 50 degrees F. Using a metal stem probe thermometer, foods inside this cooler ranged from 40 - 44 degrees F, so these food temps currently meet code. No food is stored overnight in this cooler, so food present in this cooler at the time of the inspection was removed from walk in cooler and placed in this cooler earlier today. As precaution, manager, Kevin DeSautels had staff remove all product from this cooler and place in another cooler until the unit is serviced. 2. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.
