Comments: Observed working digital thermometers throughout kitchen and bar area. Observed staff using thermometer to verify cooking temperature of chicken tenders at 195dF. Observed staff wearing gloves while working with ready to eat food items (lettuce, tomatoes and bun). Observed sliced tomatoes in top of cold holding units at temperature of 41dF and diced tomatoes at 38dF. Observed cheese sauce and chili at 167 and 171dF. Observed raw meats in refrigeration drawer at 38dF or less. Observed sanitizer (Quaternary Ammonia) at 200ppm per facility's test strips in 3 bay sink. Observed small build up of frozen condensate on ceiling and condenser of walk-in freezer. Observed food protected from contamination by means of plastic. Recommended relocating food from under condenser. Per manager, ice build up is still believed to be due to auto defrost malfunction and a work order has been placed for repair.

Interview with manager indicated that replacement of door and seals did not fix problem. Per manager, repair man was here this morning and plans to re-insulate condensate waste line and change a part involved with auto-defrost. Recommended moving or protecting all food to prevent contamination.
