Provided food service training with all kitchen staff. Reviewed cooking temperatures (steaks-130F, ground beef-158F, Pork-150, Eggs-145F). Discussed cooling of foods in shallow depths (less than 4 inches) to meet cooling schedule of 120-70F in 2 hours, then 70-45F in an additional 4 hours. Also discussed option of using an ice bath to meet cooling schedule. Reviewed reheating requirement of 165F within 2 hours, then hot holding at 140F. Reviewed time and temperature control for safety/potentially hazardous food (TCS/PHF) such as sliced tomatoes and cut melons. Discussed cold holding temperature of 45F or less- facility uses 41F or less. Discussed using thermometer to evaluate temperatures. Discussed preventing bare hand contact with ready to eat food items. Discussed the requirement to wash hands following times of contamination and between glove changes. Reviewed ill food worker policy and symptoms related to food borne illness. Discussed changing sanitizing buckets to maintain a level of quaternary ammonia sanitizing solution at 200 ppm in sanitizing buckets and 3-bay sink. Reviewed requirement to maintain adequate personal cleanliness.

Observed staff hot holding chili in steam table at temperature of 202F. Observed staff cooking hot dogs on stove-reviewed cooking temperature of 140F. Observed previously cooked and cooled peas on prep counter that staff was preparing to make into a soup- reviewed reheating temperature of 165F within 2 hours. Observed a hamburger being cooked on the grill- reviewed cooking temperature of 158F required unless patron requests a different temperature. Observed soup in crock at 187F. Observed sliced tomatoes in salad cold holding unit at temperature of 39F. Observed diced melons in fruit cocktail in cold holding unit at temperature of 36F. Observed staff wearing gloves while handling ready to eat food items (hot dog rolls). Discuss washing hands between glove changes and following times of contamination. Facility has ordered parts for one of the fans in walk-in freezer condenser unit- observed food all frozen and unit functioning properly. Recommended that CCHD could provide food training with staff.
